Specialist Notes
Trattato gastronomico sulla porchetta e le sue preparazioni, alla sua seconda edizione, dell'abate Luigi Nardi (1777 - 1837), bibliotecario della Biblioteca Gambalunghiana di Rimini. "Troiano" si riferisce alla farcitura del suino che al suo interno nasconde volatili e varie carni.
